Over 30 months : Parmigiano Reggiano organic Fattoria Rossi Riserva Speciale D.O.P. aged over 30 months. The pate is grainier, drier and crumblier and its flavour is sharper with a more complex fragrance. This cheese is richer in nutritional elements, ideally grated or used in tasty stuffings, recommended for baby food.
