Culatta - half
Cured Culatta, a type of cured meat made from the finest part of raw ham, definitely holds a place of honour among the delicacies produced by Fattoria Rossi. Obtained by the thigh of our semi-free range adult pigs. The meat is processed according to ancient procedures handed down with care through the generations: from the cut and seasoning to the maturing making it a unique cured meat product.
Matured culatta has a delicate sweet flavour and a bright red colour. It is easily digestible and so suitable for all dietary requirements.
We recommend serving it with soft butter curls, home-made bread and a nice glass of our farm Lambrusco to exalt its flavour.
